Turkish Pan Eggs
Ingredients • Eggs 4 • Onions sliced 2 medium • Red capsicum cut into thin strips 1 • Olive oil 2 tablespoons • Fresh red chillies chopped 2 • Tomatoes chopped 1/2 cup • Castor sugar (caster sugar) 1 teaspoon • Salt to taste • Black peppercorns crushed to taste • Fresh parsley chopped 1 tablespoon Method • Heat olive oil in a non-stick pan, add onions, capsicum and green chillies, mix and sauté till the onions turn translucent. • Add tomatoes, castor sugar, salt and crushed peppercorns, mix well and cook till all the moisture evaporates. • Using a wooden spoon, create four pockets in the tomato mixture and break the eggs into them. Cover and cook on low heat until the eggs are just set. • Sprinkle parsley on top and serve hot.
